White Tea
Long Glass Technique Warm the glass by rinsing with hot water for 20 seconds. Place 3.0 g of tea leaves in the bottom of the 8 oz glass. Fill the glass 1/3 with 185 to 203° water. Articulate the glass in a circular fashion to mix the contents. After 2 minute fill the glass with the remaining 185 to 203° water. Brew for 2 to 3 minutes and serve. 3 to 6 more brews are possible, depending on the tea type and quality. Alternatively, for more infused subsequent brews retain 1/3 of the first brew. Fill the glass with 185 to 203°water. Brew for up to 5 minutes and serve.
Cold Brew Tea Add 6.0 g of tea leaves to a suitable glass container. Fill with 8 ounces of room temperature or cold water. Cold water will highlight more of the fresh taste of white tea. Allow to brew for 30 minutes or more. Articulate the glass in a circular fashion to mix the contents. Continue to brew for 1 to 2 more hours if desired. With longer brew times concentration will be increased. Adjust to taste with additional room temperature water up to 8 more ounces. Refrigerate, ice if desired, and serve.
Green Tea

Articulate the glass in a circular fashion to mix the contents. After 1 minute fill the glass with the remaining 167 to 185° water. Brew for 2 minutes and serve. 3 to 6 more brews are possible, depending on the tea type and quality. Alternatively, for more infused subsequent brews retain 1/3 of the first brew. Fill the glass with 167 to 185°water. Brew for up to 5 minutes and serve.
Cold Brew Tea Add 3.0 g of tea leaves to a suitable glass container. Fill with 16 ounces of room temperature water. Allow to brew for 1 hour or more. Articulate the glass in a circular fashion to mix the contents. Continue to brew for 3 to 4 or more hours. With longer brew times concentration will be increased. Adjust to taste with additional room temperature water up to 16 more ounces. Refrigerate, ice if desired and serve.
